The sound correspondence isn't very sharp, but HYSSOP is an official borrowing from the Biblical Hebrew  AyZOA BH (Exodus12:22). The Greeks rendered this aromatic plant as hyssopos or hyssopon; by the time Anglo-Saxon uses the word it is spelled ysope.

It is not wrong to hear SOAP in the above terms, as the HYSSOP is sweet smelling and connected with ritual cleansing.
